noodles for the baby jeebus

So yeah, I've been eating a lot lately. Binging, really. I'm dealing with some depression and I tend to deal with it by over eating and biting my nails down to bloody nubs. Damn, I'm sexy.
...anyway. Food is really all I want to think about right now, so I'll post a pic of a fun dish we had for dinner on Tuesday night.
I used the recipe for "Peanut Butter Pasta" from Garden of Vegan, but I used soba (buckwheat) noodles in place of semolina pasta. Then I fried up some tofu in sesame oil (mmmm...nothin' smells better than toasted sesame oil) and added broccoli. This was a super-simple, cheap and delish dinner.

Yeah, I know there's a delicious stain on the placemat. I didn't feel like opening up photoshop to fix it. Just don't look at it, and we will all pretend it's not there.

Thanks! It's as healthy as any recipe calling for 1/2 cup of peanut butter can be anyway. :)
