...anyway. Food is really all I want to think about right now, so I'll post a pic of a fun dish we had for dinner on Tuesday night.
I used the recipe for "Peanut Butter Pasta" from Garden of Vegan, but I used soba (buckwheat) noodles in place of semolina pasta. Then I fried up some tofu in sesame oil (mmmm...nothin' smells better than toasted sesame oil) and added broccoli. This was a super-simple, cheap and delish dinner.

Yeah, I know there's a delicious stain on the placemat. I didn't feel like opening up photoshop to fix it. Just don't look at it, and we will all pretend it's not there.

This looks delicious and healthy.
Thanks! It's as healthy as any recipe calling for 1/2 cup of peanut butter can be anyway. :)
But the broccoli cancels it out, right? (I'm always here if you need me.)
Thanks, C. And we know there's never too much broccoli. Or baby corn.
