
There has been some cooking and eating going on, but we have barely had time to chew. I can't wait until our schedules open up a bit so we can enjoy things again. One day.
I love to cook fatty, southern food vegan-style, but that doesn't really fit in with our diet. I tried to compromise tonight with some tempeh marinated a balsamic vinegrette, then coated with Panko crumbs and lightly browned. We had the very tasty tempeh with a blend of greens (collards, mustard, spinach) cooked in low sodium veg broth, and this quinoa blend. I'm not a big fan of quinoa straight-up, but I liked it blended with millet and rice. Very good stuff. Did you know quinoa has an excellent nutritional profile? Just the iron and protein alone makes it some kind of vegetarian super food or something.
To complete our pseudo-southern dinner, I topped everything off with a light drizzle of Golden Gravy. Oh, don't pretend you didn't know where this was going. In my cooking, all roads lead to gravy. And all baking leads to cookies. And do you like how we are selling gallon sizes of gravy now? Ha.

i'm going to pretend i didn't see that link to purchase my own gravy goodness. i fight the gravy by only eating it at soul veg. that's my defense against nummy vegan cakes too. but cookies i'll make. why, there's a bag of 'em on my kitchen counter right now.
Ha. I like that you have a plan to "fight the gravy". Obviously, I fought the gravy...and the gravy won.
