Wowie. What a crazy couple of weeks it's been. I quit my job, and made a big, blindfolded leap off a cliff called self-employment. As exciting as it is, it really is a frightening feeling. I"m just glad that Ken and I are in this together, or I would have pulled all of my hair out by now.
My last week at work was pretty easy-peasy. I spent most of the time training my replacement, a cool girl I wish I had worked with sooner. We had "Cupcake Thursday" that week, for which I made these gems:

The big ones are cookies and cream, and the lil' ones are lemon with lemon buttercream. A coworker told me that the cookies and cream one was "officially the best cupcake I've ever had". That warmed my heart, it did. *wipes a tear* But I did admit that the recipe wasn't mine. I tend to forget that most non-veg people are not aware of the wonder that is the Isa-fueled Vegan Cupcake Frenzy.
On my last day of work, my coworkers gave me a plaque with well wishes. The company makes plaques, among other things. I would rather have a plaque than one of those silly sports bottles they make. Ha. The background of the plaque had a picture of a little green sprout, so I asked what that was all about. I was told that it's a soybean sprout in honor of my vegan-ness. Ha!

I hated working for that company, but I liked a lot of people there. Good times.
My first week as a full time Cosmo's employee was spent spreading the shit around. Ken came up with that term, and it is perfectly fitting with how I feel dealing with stupid stuff and getting nowhere. By the time the week was over, I had managed to hire painters and get the store's walls finished. Even though I wanted a nice, warm brown paint but we seem to have received a brownish-reddish paint. Don't get me started. It's not the painters fault, I think it's mine. But it still looks much better in there then before we painted. This past week, in addition to spreading the shit around some more, we were able to install the new flooring. Ahh, what a relief that is for us.

And no, the walls are not peachy-pink, that's just the lighting. They are brown. Sort of. *sigh*
But the floor does look much better now. So that's good.

I can't wait 'till next week, so I can spread more shit around and try to keep everything within budget. Yikes.
We have been eating out way too much lately, seeing how we have been at the store so often. We still had our usual Sunday brunch at home today, though. My favorite meal! Late in the morning, pajamas, husband, cats, Tivo'd episodes of "Flip That House". I just love it.

This morning we had a sweet potato hash, with fresh spinach and tempeh sausage crumbles. I also made a quickie batch of wheat biscuits (of course I did, I'm queen of the biscuits) with white bean and tempeh sausage gravy. The Tempeh and gravy recipe are from VWaV.
Man, this breakfast was the shizz. So damn good, really. Believe it or not, I'm trying to cook with a lot less oil and more straight-up vegetables. Especially since the Vegan Freak podcast #66, where Bob tells his story of recently being given a diagnosis of diabetes and high cholesterol, then reversing it by cutting back on the sugar, refined foods, and fats. Scary, yet inspiring.
Not inspiring enough for me not to make another batch of damn cupcakes, though. The flesh, it is weak:

These are the Jelly Donut Cupcakes that Isa and Terry "reciped" in the latest issue of VegNews. Don't they look adorable? Just like little donuts! Unfortunately, I wasn't wild about the taste of these at all. To me they were bland, with a touch of nutmeg. A very boring cupcake. But I can't like them all, I suppose.
For dinner, we had some simple, pre-packaged stuff. Here's the nasty looking photo:

It looks like a big mess o'shit because I forgot to take a picture before digging in. This is the Black Bean & Habanero Ravioli from Putney Pasta. We had it topped with corn, Tofutti "sour cream", and salsa verde. This stuff is seriously yummo. Putney needs to make that Butternut Squash & Maple Syrup Ravioli vegan too, because that sounds awesome.
