potluck and pah.

I made Kittee's no-bake strawberry pie for a vegan potluck today. It was the easiest thing I've probably ever made that had such a strong flavor payoff. I went the extra-easy route and used a premade pie crust by Wholly Wholesome.

I took another easy route for my other dish, which is an adapted version of a salad my dad used to make. It's a creamy broccoli cauliflower salad, and it's great cold for picnics and such.

John's Broccoli Cauliflower Salad
Serves about 4

1 large head of broccoli
1 large head of cauliflower
1 small red onion, chopped
1/4 cup slivered almonds or cashew pieces
1/3 cup Vegenaise
1 tsp lemon juice
2 cloves of garlic, minced
1 Tbsp plain soy milk
2 Tbsp fresh parsley, chopped
salt and pepper to taste


Cut broccoli and cauliflower into bite sized florets, and wash thoroughly. In a medium sauce pan with a lid, gently steam the florets in a small amount of water over medium heat until the broccoli is bright green.
Drain the florets, and run cold water over them to cool. Set aside.
In a small bowl, whisk together the Vegenaise, soy milk, and lemon juice. Add the garlic and parsley, and stir to combine. In a large bowl, toss together the florets with the dressing, coating every piece. Don't be too rough with the florets, or they may break apart. Use your hands if you need to! Gently stir in the onions, and top with slivered almonds or cashew pieces.
Chill the salad for a few hours before serving.


Man, how I love me some vegan potlucks. So much good food shows up at these things! I'm still crashing from the sugar of three (!) cupcakes and some pineapple upside down cake.(Why's it upside down!?)

I do enjoy a lazy, pre-made pie crust. And yeah, my dad came through with that salad! We weren't really salad eaters growing up, either.

I think that's aperfectly cute picture of you, but I feel your pain. Pictures of myself hurt me these days.

WOW! I have heard so many nice things about this potluck! And although I am insanely crazy jealous over the fact that you got so many vegans together at ALL, well, I have to say I'm even MORE jealous that you all got to feast OUTSIDE... in APRIL. Here in Seattle that would be a cold, soggy, wet, miserable disaster.
