off days lead to busy days.

So Ken and I had our first day off together since New Years Day. It was pretty sweet, let me tell you. This glorious day was known to others as Memorial Day, but to us it was "UPS and USPS don't pick up today" Day. We slept, lounged, did some work on our office remodel, and enjoyed ourselves. Oh yeah, we also ate some food.

Not wanting to waste too much of my day off in the kitchen, I decided on some quickie foods that still have a nice summer picnic kind of feel. First, I took some of the May Wah vegan chicken legs and doused them with store-bought barbeque sauce (watch out for the anchovy-based worcestershire ones...) and baked them in the oven until bubbly. Along with the fake meat stuff, we had some roasted veggies. Purple potatoes, zucchini, and fresh green beans lightly coated in olive oil, then liberally sprinkled with this stuff.

We also had a quick cold salad with cherry tomatoes, diced cucumber, chopped parsley, and a white balsamic vinaigrette. This is my favorite summer produce combo!

Keeping with the quickie theme (and branching out into semi-homemade territory), I made some vanilla pudding from a box, and layered it with fresh sliced strawberries, chocolate chips, and a whipped cream on top. Ken loved this so much he was making moaning type of noises. I think it was because of the parfaits, anyway. Here are the parfaits chilling in our messy fridge:

Sadly, Monday was the majority of our cooking this week. It's been crazy busy ever since. Our friend Jill did make some yummy, fluffy pancakes for dinner last night to celebrate the Lost season finale though, which was nice. I'm always excited about pancakes!

that all looks delish! Funny you should mention your day off...I was gonna see if you guys wanted to come up for the vegan prom in July but I can see it would be difficult unless you shut down the store. Well...if possible let me know....you guys could stay with us!!!

mmmm...i loves purple tatoes. and the parfaits are healthier than choc cake because they're lighter in color, right? isn't that how that works?

Hi Elise- There's a vegan prom?! That sounds awesome! I'm sorry to say that our travel budget for this year is already blown with the upcoming AR conference in August, though. Thanks for the invite!

Laura- Yes, the lighter the color of the sweet, the less bad for you. Umm Hmm.

Oh my goodness girl you need a vacation!! Of course we are all greatful for all the hardwork you and Ken put into Cosmos :-)
