Last night we had a tremendous stir fry. We began with one vidalia onion, chopped, tossed in the wok with a few splashes of oil and some taco seasoning. Add in 1/2 bag of Soy Curls (soaked and drained)and stir fry with about 1 cup corn kernals and a few handfuls of baby spinach. Serve over brown rice, and top with ripe tomatoes, avocado chunks, and black beans. Huge food!

Something else we have been going gaga over is ravioli with cream sauce. This takes no time to make, which is perfect for us since we don't get home in the evenings until around 9:00pm most nights. We "make" a quick batch of Rising Moon ravioli (Butternut Squash is my fave), and top it with some semi-homemade cream sauce.
Mimic Creme makes the best damn cream sauce ever. All I do is heat up some unsweetened Mimic Creme on medium heat, and add some vegan chicken-style seasoning to taste, along with basil, minced garlic, and lots of spinach. Sprinkle libreally with vegan parma. Done! Awesome! Sop up the extra with Teese bread!

tony and i grilled a pizza last week. it cooked so quick and it was mighty tasty. i love making pizza, but i hate that it takes so long to cook. the grill cooked it in no time. actually, so quick we burnt the first one. but now we know!
Grilled pizza sounds exciting! Was this on your outdoor grill, or an indoor grill?

My quickie dinner of choice lately is a baked potato (done in the microwave) topped with sauteed kale, broccoli or both and mixed up with margarine and copious amounts of nutritional yeast. If I'm extra fancy, I add some mushroom soy sauce and chili garlic sauce. It takes less than 10 minutes to make the whole shebang and is so so cheap and tasty!

Anything stir fryed with a Chineseish sauce. Garlic Sauce, orange sauce, brown sauce, sweet and sour sauce, etc. So easy, so quick!
(or I just pull out a jar of marinara sauce and boil pasta in a bag...)
Seriously Jes, stir fry is the perfect quick meal! We go back to it week after week.
I really need to get on trying that mimiccream! Your raviolis and stir fry look like perfect quick meals. Quick meal for us this week... black beans on pan-fried polenta with spinach, garlic, sun dried tomatoes. Oh, and salads of course!
you don't even know how much i want some Teese. We are out of soy curls (another staple in our house now) . . . hope i can control myself from buying some Teese if we come in for curl refill. damn it
