Okay, food! I took advantage of some spare time (!) yesterday, and whipped up a few things. Like this yummy Cherry Chocolate Almond bread.

The recipe for this bread is from Don't Eat Off the Sidewalk #2, with only a minor adjustment. The recipe called for dried cranberries, and I subbed dried cherries. This bread is epic. In fact, it stirs so many emotions that it should be called PMS bread. So there you go. Also, it's pretty!

I also made another tester recipe from the upcoming Vegan Latina, Sweet Basil & Corn Pot Pie (Pastel de Choclo). I can't think of a better way to kill 2 hours then to make this lovely dish.

After all that cooking yesterday, I think I might just have a sandwich for dinner tonight. After I call the waaambulance* about my sore ribs.
*Thanks, Christy. This made me laugh. But the laughing hurt my ribs, so...

That bread looks incredible. I may have to track down the recipe somewhere. Also, I have definitely done that to myself before. My dr. said it was tendonitis of the ribcage. Who knew? He told me to take advil and alternate heat and cold on it and it would go away eventually, which it did. Hope you're feeling better soon!
Mmm chocolatey bread and cheezy casserole? Sounds like the perfect cough healing combo! That must have been rough moving the store while not feeling good--I'm sorry I couldn't make it in before the move, but the rain was a strong deterrent. Here's to hoping the cough goes away completely!
I am sorry you have such a stubborn cough! A cherry chocolate almond bread sounds like the best quickbread ever! Yum. And that casserole looks great, too. I need to check out the recipe.
Hey Mrs. Spy- thanks for the tips. Hot showers have been a good friend during all of this. I look forward to feeling better soon! About the bread recipe, I'm not sure if anyone has posted it online, as the zine author may or may not be cool with that. But the zine is only a couple of bucks and available at HerbivoreClothing.com.
Hi Jes!- No worries on not stopping by the store before the move. I'm sure we will run into each other out and about. Oh, and there's no cheese in that casserole, believe it or not. That's a corn pudding type of topping. Yum!
Hey Mihl- Thank you for the kind words. I'm sure I'll be feeling right as rain in no time at all.
i'm a big cherry/chocolate fan. and i have that zine. damnit.
all these vegan latina tester recipes have been looking wonderful. it'll be nice to have a source of fancier mexican dishes.
Vegan Latina does look exciting! The casserole above is Chilean, I believe.
Ahhhh, almond, chocolate, yum!
That casserole looks great especially on this cool spring day.
I check in a couple of times a week to see what ya'll are eating and it all looks so good. I'm glad you are feeling better. I hope to visit soon.
The corn pot pie looks delicious and unique! Yum!
