Our eating habits have been a bit hurried lately, but I did manage to whip up some Avocado Potato Salad from Vegan Brunch. We had it alongside Ken's favorite Tempeh Wings from Don't Eat Off the Sidewalk. Our own little winter BBQ.
Hey, you know what's awesome? Chocolate Chip Cookie Pie! Or, Chocolate Chip Freaking Cookie Pie, as it should probably be called. This simple recipe can be found in 500 Vegan Recipes, which has yet to disappoint.
First bake the crust, which is really just a big cookie:

Then fill with a sweet, fluffy, pudding-like filling:

Let set in the fridge until cool, then cut off a slice.

That's the type of dessert one might call "dangerous". My pancreas might call it that. My mouth calls it delicious.
I need to get myself in gear for this weekend's Vegan Bake Sale for Haiti! Myself and some other great folks will be there selling amazing baked treats for Doctors Without Borders/MSF USA. Please come out if you are around Atlanta this weekend!

Holy chocolate that pie! And the suitcase cat bed is awesome! I've been wanting to make one for awhile but haven't gotten around to it. I bet my boy cat would be all about it. Good luck with the bakesale!!
The suitcase bed looks great! Now I wish I'd made one for our kitties instead of giving away my spare vintage suitcase!
