So yeah, Ken and I have been trying to make a baby for quite some time now. I'm doing my best to make my uterus a friendly place that a baby might want to visit for about nine months, but there are still a few things I could do that would help make it happen. For one, I need to clean up my diet. Sure I'm vegan, but I eat sweets like the plane's going down. Every day. And when you eat too many sweets, there's not as much room for more important things like vegetables. So my first step- eat more vegetables. Simple enough, right? Hopefully this could lead to my second step- lose weight. I'm about 50 lbs. overweight, which isn't the best for optimum ovulation. being 35 years old isn't the best for optimum ovulation either, so my third step- get younger.
Here are some of our most recent veggie-filled meals.
Chard and chickpea soup. Also known as "toss whatever crap you have on hand into the crock pot until it's hot".
Brown rice pasta topped with escarole, tomatoes, white beans and garlic. Bonus, a few simple "pork" basil meatballs made with Match Vegan Pork.
Vegetable casserole, another thrown-together yet delicious meal. Sweet potatoes, zucchini, tomatoes, basil and onions topped with bread crumbs and a sprinkle of Daiya.
Some grilled pineapple salsa, which we used to top tasty soy curl tacos. Taco recipe and salsa recipe both from Vegan Brunch.
Not very vegetabl-y, but very wonderful tomato rosemary scones I made for a vegan potluck last weekend. Another fine recipe from Vegan Brunch. (crappy camera phone alert)
So what do you do when you want something sweet, but just can't have it? Any advice for getting off the white stuff?
