Vegan MoFo Day 11: tempeh bowl

This is the kind of dinner I make when I start feeling guilty about eating sandwiches for every meal three days in a row. I marinade cubes of tempeh in soy sauce, toasted sesame oil, and rice wine vinegar. Toss them into a pan with a bit of hot oil until they are browned, then add some bite sized pieces of kale until just wilty. Serve with quinoa and roasted sweet potatoes and onions.

This one made my mouth water. I haven't made tempeh in ages. Time to remedy that, I think.

That looks yummy. My favourite go to healthy meal is definitely veggies and noodles in broth.

This is absolutely my favorite kind of meal! I usually go for a grain/bean or lentil combo with a big veggie stir-fry on the side when I'm looking for a healthy meal

That bowl looks delicious! I think my favorite healthy meal is a huge salad with romaine and plum. I might throw nuts or seeds on top and dress it with miso-tahini dressing. So very good!
