There's been a lot of stressful things going on in my life lately that have made me crave carbs and hugs. So into the kitchen I went, to create foods that would hug me from the inside.

Biscuits with Chorizo Gravy
Vegan Chorizo Sausage Gravy
Serves about 4
1 cup Chorizo Flavored TVP Chunks
2 cups water
1 cup plain soy milk
4 Tbsp canola oil
1/4 cup flour
Place TVP in a microwave safe bowl and cover with water. Microwave on high for five minutes. Meanwhile, heat canola oil in a large skillet over medium heat.
Sprinkle the flour over the oil, and mix together to make a roux. Add the soy milk to the roux, and whisk until smooth. By now your TVP should be finished in the microwave. Stir the TVP into the skillet mixture, reserving the liquid from the TVP. Slowly add the liquid from the TVP into your gravy, until it is thick to your liking. You an always add more soy milk or water if the gravy is too thick. Lower the heat to low, and simmer for a few minutes, to allow the flavors to mingle. Serve hot over biscuits.
