Have you tried the bagel recipe from Vegan Brunch yet? What the heck are you waiting for!? Turns out, homemade bagels are shockingly easy to make. I recently baked a batch of bagels, and used some extra dough for sweet bagel twists. These are just bagels of a different shape, sprinkled liberally with brown sugar and cinnamon. Slathered with Earth Balance, they were fantastic.

I have a back log of cupcake pictures to share, too. The most recent were for my dad's 75th birthday a few weeks ago. His favorite flavors are coconut and pineapple, so I did a coconut cupcake with crushed pineapple cream cheese frosting. my usual Tofutti cream cheese frosting turned pretty drippy when I added the crushed pineapple, and I was out of powdered sugar to work it into a firmer texture. But dad didn't mind, they still tasted great.

For Easter last month (I'm so behind, I know...) I made lemon vanilla cupcakes with vanilla frosting, and chocolate mint cupcakes with mint frosting. I like the look of the lemon vanilla ones, topped with vegan gummie bun-buns.

We put together another successful vegan bake sale earlier this month, too! We had such fun last year participating in the Worldwide Vegan Bake Sale, that we decided to do it again. Despite three of the volunteer bakers backing out at the last minute (not you, Steph!), we ended up with a great selection of goodies to sell to benefit Ahimsa House. Since we had less treats than we expected to, we ran out of treats only two hours into the event. But that's way better than being left with too much at the end of the day. $514 was raised for Ahimsa House, woo!

I made Daiya Cheddar Scones, Raspberry Chocolate Chip Blondies (from VWaV), Chocolate Strawberry Sammich Cookies, and Marshmallow Cereal Bars. Good stuff, all around.

In non-baking news- Miles is goofy, as usual. I'm having to place cat litter boxes in various spots around the house to help deal with territory issues between Moe & Miles. Miles hung out in the empty pans for a while when I brought them in.
