Viva Vegan! yet? Well, you totally should. It's filled with classic Latin dishes made vegan. I've made a couple of meals for us from
Viva! recently.
Creamy Potato Peanut Stew with Soy Curls and chickpeas. I know it's 150 degrees outside and not exactly stew weather, but serving it with a cold glass of Brown Sugar Limeaid helped with the heat. That, and eating it inside our nice, climate controlled house. (bleh... move along, summer)

A more season-appropriate dish from
Viva! is this cold Quinoa Salad with kalamata olives, red onions, spinach, corn, tomatoes, lime juice, and some seasoning. The lime juice makes the flavors extra sparkly.

Potato Pancakes with Peanut Sauce and a side of kale. Dios mio.

Despite out love for Latin food, our fall-back is almost always Italian inspired. Here are a few shots of a recent calzone, made with a whole wheat crust. I used a basic pizza crust recipe, this time from the Bob's Red Mill Baking Book I borrowed from the library. The 'zone is stuffed with tomato sauce,
Daiya vegan cheese, kalamata olives, onions, and vegan Smart Bacon. So good.
And huge.

You know what's good to have after consuming a five pound calzone? A couple of vegan maple cream cheese cinnamon rolls!
