happy father's day

A few months ago, my father was diagnosed with stage 4 lung cancer. After several rounds of unsuccessful treatment, he is now on hospice. Since March, I have watched a strong, sharp man change into a frail, confused, helpless man. It's the most difficult thing I have ever dealt with, and that's saying a lot. A terminally ill loved one is a situation I would not wish on anyone. I am in the process of finding a facility where my dad can receive the 24 hour care he desperately needs. I haven't always gotten along with my dad, but none of that matters anymore. Now he's not someone to argue or disagree with, he's someone to help while remembering the times he has helped me.

I love you dad. Happy father's day, for the last time.

alimento delicioso del vegano!

So does everyone have a copy of Terry Hope Romero's new cookbookViva Vegan! yet? Well, you totally should. It's filled with classic Latin dishes made vegan. I've made a couple of meals for us from Viva! recently.

Creamy Potato Peanut Stew with Soy Curls and chickpeas. I know it's 150 degrees outside and not exactly stew weather, but serving it with a cold glass of Brown Sugar Limeaid helped with the heat. That, and eating it inside our nice, climate controlled house. (bleh... move along, summer)

A more season-appropriate dish from Viva! is this cold Quinoa Salad with kalamata olives, red onions, spinach, corn, tomatoes, lime juice, and some seasoning. The lime juice makes the flavors extra sparkly.

Despite out love for Latin food, our fall-back is almost always Italian inspired. Here are a few shots of a recent calzone, made with a whole wheat crust. I used a basic pizza crust recipe, this time from the Bob's Red Mill Baking Book I borrowed from the library. The 'zone is stuffed with tomato sauce, Daiya vegan cheese, kalamata olives, onions, and vegan Smart Bacon. So good.

You know what's good to have after consuming a five pound calzone? A couple of vegan maple cream cheese cinnamon rolls!
